A sweet and simple summer recipe!

If you ever need something quick (and simple!) to take to an event or for entertaining then let me share the perfect recipe!
You only need 3 ingredients and about 10 minutes time, start to finish!
Lemon Creams
You need:

Mini Fillo Tart Shells (2- 15ct boxes)
Lemon Curd
Whipped Topping

( I love that all of these items are in the same aisle at our grocery store!)

First, the tart shells go into a 350 degree oven for just 4 minutes.
Take them out, set aside to cool.

Empty the lemon curd into a mixing bowl and beat until soft and fluffy.

Add about half of the whipped topping and beat slowly until it turns a pale yellow.

The mixture is ready to go into the shells. You can spoon it in or fill up a pastry bag. I love using a pastry bag because it makes it so quick and less messy.

Done!

(I added some lemon zest on top just to fancy them up a bit)

These seem to be a hit wherever I take them. I get lots of requests for the recipe and people are always surprised to hear how simple they are!
